
Sugar & Gluten Free Coconut Macaroons
These soft & chewy coconut macaroons are a fabulous guilt free treat, perfect for paleo or keto dieters.Â
Here's what you'll need:
3 egg whites at room temperature
1 cup xylitol
1 teaspoon vanilla extract or vanilla bean paste
1 1/2 - 2 cups desiccated coconut
Here's how to make it:
1. Pre-heat the oven to 180 degrees Celsius or 350 degrees Fahrenheit.
2. Line a baking tray with baking paper.
3. Place egg whites into the bowl of an electric mixer and beat until soft peaks form.
4. Add the sugar in gradually beating continually until the mixture becomes stiff and glossy.
5. Add vanilla extract and coconut to the egg white mixture and fold through with a spatula until combined. Do not overwork the mixture.
6. Using an ice cream scoop or tablespoon, scoop the mixture onto the lined baking tray, allow enough space between each macaroon to expand whilst baking.
7. Place in the oven and cook for 15-18 minutes or until the macaroons are slightly golden on the top.
8. This part is optional and is not sugar free - melt some dark chocolate in the microwave and drizzle over cooled macaroons. The darker the chocolate the less sugar content.Â
